Cuisine American, Mediterranean
- 1 packet of ravioli any flavour will do
- 1/4 cup sundried tomatoes chopped
- 1/4 cup pitted black olives sliced
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- Grated Parmesan cheese optional
Cook your ravioli according to the packet instructions in a sauce pan on the stove. Drain once cooked.
In the same pan, add the olive oil, sundried tomatoes, olives and dried thyme. (optional dollop of butter)
Move the saucepan in circular motions to mix all the ingredients gently to not break up the ravioli.
Season with salt and pepper to taste, and top with grated Parmesan cheese if you're feeling fancy.
Ingredient Swap Ideas:
- Swap the sundried tomatoes for fresh cherry tomatoes, halved or quartered.
- Use green olives or Kalamata olives for a different flavour.
- Add some chopped fresh basil or parsley for an extra burst of freshness.
- Replace the dried thyme with fresh thyme leaves or a sprinkle of Italian seasoning.
- For extra protein you could add slices of ham, or pre-cooked chicken.

- A simple green salad with a light vinaigrette
- Garlic bread or Ciabatta for a more filling meal
- Roasted vegetables, such as broccoli or Brussels sprouts, for a nutritious and filling side
- A side of sautéed spinach or kale for an extra dose of greens
