- 3 chicken breasts
- 2 tbsp butter
- 2 tbsp freshly squeezed lemon juice
- 1 stock cube
- 2 cups water
- 1 tsp coriander chopped
- 18 cherry tomatoes halved
Turn the pressure cooker to sauté.
Add the 3 chicken breasts.
Add in 2 tablespoons of butter, 2 tablespoons of freshly squeezed lemon juice, and stock cube.
Cook until just the stock cube and butter has melted.
Cook on high pressure for 20 minutes.
While the chicken is cooking, halve 18 cherry tomatoes.
Once the chicken is cooked, turn to sauté mode and add the cherry tomatoes, cook them until they are slightly softened.
Serve hot, garnished with coriander and lemon wedges on the side.
