Fast Pasta Recipe, Packet ravioli with sundried tomatoes and olives

I’m not one for complicated recipes that require hours of prep and cooking time. Sometimes, all I need is something quick, easy, and satisfying. That’s where this recipe comes in, a simple yet flavourful way to jazz up a humble packet of ravioli. With just a few ingredients, you can transform a simple packet of pasta into a delicious and satisfying meal.

This recipe serves 2 small servings or 1 large one.

Ingredients:

  • 1 packet of ravioli (any flavour will do, you see the flavour I used below)
  • 1/4 cup sundried tomatoes, chopped
  • 1/4 cup pitted black olives, sliced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Simple Steps:

  1. Cook your ravioli according to the packet instructions in a sauce pan on the stove. Drain once cooked.
  2. In the same pan, add the olive oil, sundried tomatoes, olives and dried thyme. (optional dollop of butter)
  3. Move the saucepan in circular motions to mix all the ingredients gently to not break up the ravioli.
  4. Season with salt and pepper to taste, and top with grated Parmesan cheese if you’re feeling fancy.

Ingredient Swap Ideas:

  • Swap the sundried tomatoes for fresh cherry tomatoes, halved or quartered.
  • Use green olives or Kalamata olives for a different flavour.
  • Add some chopped fresh basil or parsley for an extra burst of freshness.
  • Replace the dried thyme with fresh thyme leaves or a sprinkle of Italian seasoning.
  • For extra protein you could add slices of ham, or pre-cooked chicken.

Side Dish Suggestions:

  • A simple green salad with a light vinaigrette
  • Garlic bread or Ciabatta for a more filling meal
  • Roasted vegetables, such as broccoli or Brussels sprouts, for a nutritious and filling side
