Yummy Autumn Salad

I’m totally stoked about this gorgeous autumn salad! It’s like the perfect blend of cosy vibes and tasty bits, made for a chill evening. I’m gonna walk you through what’ I’ve got here’s in it, how I made it, and some fab swaps and sides you could try too.

What’s in the Salad?

I’ve chucked together a bunch of lush ingredients for this salad:

  • Greens: Fresh rocket & spinach (arugula for you Yanks)
  • Sweet & Fresh bits: Sliced tomato
  • Crumbly goodness: Blue cheese
  • Crunch: Walnuts
  • Dressing: Balsamic glaze

How Did I Make It?

  1. Prep the salad: Wash and dry the rocket and spinach. Chuck it in a bowl.
  2. Add the bits: Add sliced tomato, crumbled blue cheese, and walnuts.
  3. Dress it up: Drizzle balsamic glaze on top. Toss gently.

Swaps You Could Try

Want to mix it up? Try these swaps:

  • Greens: Mixed leaves instead of rocket, or ice berg which is one of my favourites.
  • Cheese: Goat’s cheese or feta instead of blue cheese for a milder taste.
  • Nuts: Pecans or almonds instead of walnuts.

Side Dish Suggestions

This salad’s ace on its own, but here’s what I’d pair it with:

  • Grilled chicken: For a bit of protein punch
  • Crusty bread: Sourdough or baguette for scooping up the bits
  • Soup: A light veggie soup for a proper autumn feast

Why I Love It

This salad’s like autumn in a bowl, all warm, earthy vibes with that balsamic glaze tying it all together. Plus, it’s dead easy to whip up for a midweek dinner or a posh Sunday lunch. I use to not love blue cheese by now I do I think I could eat it on it’s own right from the packet 😀 but this just takes it to another level in in this salad.

Extras you can add

If you want to level up this salad even more try some fresh herbs, if you don’t have balsamic glaze you can try balsamic vinegar. You can also make a simple dressing with olive oil, balsamic vinegar and dried mustard. Another option if you don’t have fresh herbs, is freeze dried herbs, they tend to be milder but you can still get that flavour. Basil would go with this so well!
