Creamy Chicken and Vegetable Bake

Simple Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large oven-proof dish, combine sliced carrots and chopped onion.
  3. Add a stock cube and 1 cup of boiling water.
  4. Add 1 tablespoon of olive oil and 1 teaspoon of Italian herb seasoning.
  5. Add 150g of cream cheese and stir all of it until melted and smooth.
  6. Place 2 pieces of chicken breast in the oven-proof dish and pour some of the creamy sauce over the top.
  7. Sprinkle with salt to taste.
  8. Bake in the oven for 40 minutes, flipping the chicken halfway through.
  9. Make sure the chicken is cooked through and adjust cooking time if required. Serve hot and enjoy!
