Creamy Chicken and Vegetable Bake

Simple Steps
- Preheat your oven to 200°C (400°F).
- In a large oven-proof dish, combine sliced carrots and chopped onion.
- Add a stock cube and 1 cup of boiling water.
- Add 1 tablespoon of olive oil and 1 teaspoon of Italian herb seasoning.
- Add 150g of cream cheese and stir all of it until melted and smooth.
- Place 2 pieces of chicken breast in the oven-proof dish and pour some of the creamy sauce over the top.
- Sprinkle with salt to taste.
- Bake in the oven for 40 minutes, flipping the chicken halfway through.
- Make sure the chicken is cooked through and adjust cooking time if required. Serve hot and enjoy!
